小鍋爐埋在大鍋爐裏，幾乎是大多數營業用咖啡機共同的配置，也有一些廠牌採用大小雙鍋爐的設計，但是對使用量相對較小的國內來說，那個高達2-3升的小鍋爐，可能是一鍋不流通的恆溫的死水，這也是絕大多數的espresso咖啡機廠商不採用雙鍋爐的原因。</div>

一樣是小鍋爐埋在大鍋爐裏，其中卻另有玄機，這玄機卻是扼住品質的關鍵！</div>

小鍋爐埋在大鍋爐裏，藉著大鍋爐熱水的包裹來保持小鍋爐的溫度，這是間接加熱的原理，讓小鍋爐的水有獨立的水源又不至於過熱。藉著大鍋爐的溫度控制來控制小鍋爐，理論上好像很完美，但是大鍋爐並不是滿的，水加熱會產生水蒸氣，水蒸氣會產生壓力，這壓力必須被貯存，所以大鍋爐的水位大約只在滿水位的50％到60％而已，而大部分的小鍋爐都是從大鍋爐的底部穿過爐體然後從頂部穿出，再接到出水頭，也就是說小鍋爐所經過的路徑，有60％是大鍋爐的熱水區，有40％是大鍋爐的蒸汽區，熱水區和蒸汽區的溫度有著10度左右的差距！</div>

差個3度就可能是酸或不酸，焦或不焦，何況是10度！</div>

當我們一直在煮咖啡的時候，流動的水會使溫度的差距縮小，而感覺不出溫度的差距，但是，只要隔個五分鐘煮咖啡，你就會發現出來的水帶著蒸汽。帶著蒸汽的水沒有100度也接近100度，你用這個水煮咖啡，下場如何是可預知的！</div>

怎麼辦？把前兩杯的水放掉讓水流動使溫度稍微降下來就可以了，很間單對不對？可是並不是每次都會記得要做這個動作，每次都做也挺麻煩的，於是，有些廠商就在這小鍋爐上動腦筋，想辦法讓小鍋爐的水保持穩定的溫度纔不會前頭過熱、後頭的溫度不足。</div>

小鍋爐的管路連結到出水頭的設計各廠牌大同小異，只是管路的路徑、粗細使保溫的效果略有差異但是不易察覺。但是FAEMA和 la CIMBALI的小鍋爐的設計構造和其他品牌不太一樣，而兩個品牌的小鍋爐擺設的位置也有所不同，他們在小鍋爐的進水口上另加一個閥門，拉出另一條水道，不煮咖啡的時候，這條外加水道連結出水頭的管路使水流回小鍋爐做一循環，當你要煮咖啡的時候，開關一按，切斷循環。循環的水流不但較新鮮，更可以有效的降低出水過熱的問題，再經過適當的溫度控制就可以比其他品牌機器的恆溫控制更精細，有機會看到這兩個品牌時，注意一下，你會發現放水時他們的出水頭比較不會冒煙，而其他的品牌前幾杯水通常會帶著蒸汽的煙霧。</div>

新鮮的水是煮咖啡的基本條件，長久以來一直是espresso機器在追求品質上一個不小的障礙，這兩個品牌做出了有效的控制方法，也許是他們比其他廠牌貴的原因！如果你認爲這中間的價差不值得投資，那麼就按下開關先把過熱的水排掉吧！</div>

Espresso的另一個關鍵是“研磨”！</div>

“研磨”很重要！尤其是espresso！那麼大的壓力壓迫之下，磨出來的粉若是不均勻，顆粒大小不一，水就會循著最短的路徑出來，最短的路徑就是粗顆粒和細顆粒的交會處，粗顆粒的部分就會過度萃取，細顆粒的部分說不定還是乾的，所以，研磨的重點在均勻，能不能夠均勻在“刀片”！</div>

有些廠商會說馬力要夠，否則磨久了機器會過熱！有些會說粉的出口路徑要短，不然粉會淤塞在裏面，有些會說轉速要慢，粉的溫度纔不會過高！有的會說刀片的盤徑要大，8釐米的比6.4釐米的好，面積大磨的穩，也磨的好……！</div>

我沒有說這些不對！這些都對！但是“均勻”來自刀片上的那些“刀鋒”！跟上面那些沒有關係！</div>

怎樣才能“削鐵如泥”？既削了鐵卻也不能傷了自己，傷了自身的刀鋒就稱不上“削鐵如泥”了！</div>

“削鐵如泥”來自深厚的鍛造技術！這種技術可能要多花些錢！</div>

我不是說那個刀片可以削鐵如泥，再好的刀片也不堪夾在豆子裏的碎石和鐵釘的摧殘！我是說刀片上刀鋒的排列和層次，纔是“均勻”的關鍵！你可以拆開磨豆機看看自己的刀片長的是什麼樣子，用什麼材質做的，然後下次食品機械展的時候，就可以請那些廠商拆開看看，比較之後你就知道要選哪一種的刀片（應該可以只買刀片不買磨豆機，但是尺寸要合）！</div>
