有鑑於此,IARC(國際腫瘤學會)於1991——1997年間蒐集整理相關的醫學研究將咖啡定爲B類毒品,主因其咖啡因對神經系統的影響遠低於A類毒品(如安非他命、海洛因等),對一健康成人而言,咖啡因的半衰期約是3——4個小時,而其營養和藥用價值則相對的顯著,因此歐盟建議,正常成人每人每天攝取咖啡因宜以300毫克(mg)爲限。</div>

咖啡最爲人關切的是黃麴毒素和赭曲毒素的污染,尤其是位處於溫暖潮溼的海島型氣候。這兩種毒素皆是由黴菌所產生,可能發生於生豆或熟豆時期,赭曲毒素在210——270℃才能被破壞和分解,咖啡豆的烘焙溫度和時間介於210——270℃和15——20分鐘,因此烘培後熟豆的赭曲毒素殘留一般遠低於黃麴毒素(赭曲毒素對肝臟的破壞力遠勝於後者)。</div>

在標準的包裝、儲存、和運輸流程規範下,生豆的污染通常較無疑慮,其有效保存期限可達一年,好的進口商主要留意儲存環境大都可輕易通過檢驗標準。相對地,IARC較關心的是熟豆的污染和其營養成分的保存。由於烘培後的咖啡豆是乾燥的,具不斷吸收水氣、味道、和氧氣等特性。在乾燥的區域或國家,在沒有隔離氧氣和溼氣的室溫環境下約能保鮮四到六星期,磨粉後則僅能保鮮兩星期。因此IARC建議咖啡豆或粉的出售須在接觸空氣的2——3小時內包裝於微真空的單向透氣袋中,並最好使用玻璃或陶瓷製品密封儲存。</div>

此外,人工延長保鮮期的方式(如氮氣填充包和冷藏)對營養成分的保存助益不大。天然的營養成分受活體機制保護得以較長期的保存,但烘培後咖啡豆的天然營養成分則極易被氧化和潮化所破壞和衰減,因此IARC認爲儘快使用完纔是有效保存咖啡豆營養成分的最佳策略。有鑑於此,摩朵咖啡倡導健康的喝咖啡法應採少量咖啡豆包裝並於兩星期內用畢,最佳的飲用時期是烘培後第三天開始,多數的檢驗報告皆採這天的樣本。</div>
